Valentine’s Day Recipe – Honey Lavender Top Deck Screams!
Valentine’s Day is the day in between Christmas and Easter when we are most tempted by our chocolate cravings, but luckily Aussie mum, model and author, Abigail O’Neill is here to save us!
Abigail has made headlines in recent months, because for a 43-year-old mum of three she looks pretty…spectacular and one of things she credits this to is chocolate! She’s not talking about your average chocolate though she’s talking about Cacao, the superfood chocolate!
Abigail has never had a cheat day from her super healthy diet, now that might make some of you roll your eyes, but she’s not looking down on us ‘willpower-less’ folk, she has some advice, Abigail recommends finding a healthy alternative and keeping it on hand for when you get cravings so if your weakness is pizza get Googling healthy pizza recipes and we promise you they’re out there. Today, in honour of Valentine’s Day, she has given us a deliciously healthy recipe from her book that is shaped like hearts, perfect! So put the lid back on that box of chocolates, grab a mixing spoon and whip some of these healthful babies up.
HONEY LAVENDER TOP DECK SCREAMS
Musk-like in flavour these superfood-packed chocolates are a girls-only affair.
Mesquite Honey Chocolate
60g cacao butter, finely chopped
2 tablespoons raw coconut oil
1 tablespoon raw honey
2 tablespoons mesquite powder
⅓ cup raw cacao powder
¼ teaspoon vanilla powder
Lavender Maqui Top Deck
100g raw creamed coconut
1 tablespoon raw coconut oil
4 drops lavender essential oil
1 tablespoon raw honey
½–1 teaspoon maqui powder
Pinch of salt
Melt creamed coconut and coconut oil in a glass bowl over boiling water. Remove from heat adding lavender, honey and salt. Swirl through maqui powder. Pour spoonsful into moulds and chill 10 minutes to set. In a clean bowl melt cacao butter and coconut oil over boiling water. Remove from heat and mix in honey, vanilla, mesquite and cacao. When smooth, pour over lavender layer. Set another 10 minutes. Scream your heart out, Top Deck!
Notes: for a superfine white-chocolate feel, use quality creamed coconut when making these. When creating raw chocolate with creamed coconut, be careful not to over-mix, as the oil will begin to separate from the coconut mass instead of combining beautifully. Also, check that your mesquite powder is ultrafine, with no gritty particles. If not, simply sift it through a fine sieve as you add it into the bowl.
